Our friend Martin served up an amazing Mexican (vegan) meal for us last week… which included this fantastic bean & corn dish. Perfect for raw flax seed cracker dipping… Along side we made a out-of-this-world guacamole and spicy salsa. Fiesta, fiesta!
To make his recipe you need to mix the following ingredients and let them soak together for 30 minutes before you begin munching.
- 2 fresh corn (buy the whole thing, and just cut of the sides with a knife)
- coriander (chopped)
- salt & pepper
- Small red onion (chopped)
- 4 delicious tomatoes (chopped)
- 1 cup beans (whatever kind tickles your fancy)
